Method
Pre-heat your oven to 375°F (190°C) and lightly grease a medium-sized baking dish.
In a small pan over medium heat, lightly sauté the chopped shrimp with the Cajun seasoning until they are just pink and opaque, about 3 minutes.
In a large mixing bowl, beat the softened cream cheese until smooth, then stir in the mayonnaise and hot sauce.
Fold in the cooked shrimp, diced celery, red bell pepper, half of the green onions, and half of the shredded cheddar cheese.
Spread the mixture evenly into the prepared baking dish and sprinkle the remaining cheddar cheese over the top.
Place in the oven and bake for 15 to 20 minutes, or until the cheese is melted and the edges are bubbling.
Remove from the oven, garnish with the remaining green onions, and serve warm with crackers, toasted baguette slices, or tortilla chips.
Notes
For a smoother texture, ensure your cream cheese is completely at room temperature before mixing.
You can adjust the heat level by increasing or decreasing the amount of cayenne hot sauce used.
If you want a smokier flavor, add a half teaspoon of smoked paprika to the mix.
