Copycat Planet Hollywood Cap'n Crunch Chicken Tenders
This legendary restaurant copycat features tender chicken strips coated in a unique mixture of crushed Cap'n Crunch cereal and cornflakes. The result is a perfectly balanced sweet and salty crunch that pairs beautifully with a creamy honey mustard dipping sauce.

Method
Prepare the coating by placing the Cap'n Crunch cereal and cornflakes into a food processor. Pulse several times until you have coarse crumbs; do not grind into a fine powder. Alternatively, place cereal in a heavy-duty zip-top bag and crush with a rolling pin.
Organize your breading station with three shallow bowls. In the first bowl, whisk together the flour, garlic powder, onion powder, and a pinch of black pepper. In the second bowl, whisk the eggs and milk together. In the third bowl, place the crushed cereal mixture.
Coat each chicken tender first in the flour mixture, shaking off any excess. Dip the chicken into the egg wash, then press firmly into the cereal crumbs until fully and evenly coated.
Heat about 1/2 to 1 inch of vegetable oil in a large heavy skillet over medium heat (target temperature is 350°F/175°C).
Carefully place the chicken tenders in the hot oil. Fry in batches for 3 to 4 minutes per side until the coating is golden brown and the internal temperature of the chicken reaches 165°F (74°C).
Remove the chicken and let it drain on a wire cooling rack placed over a baking sheet to keep the crust crispy.
In a small bowl, whisk together the yellow mustard, honey, and mayonnaise to create the signature dipping sauce.
Serve the chicken tenders warm with the dipping sauce on the side.
Notes
Do not over-process the cereal; having slightly larger bits of cereal creates a more authentic restaurant texture.
Using a wire rack for draining is better than paper towels, as it prevents the bottom of the chicken from getting soggy.
Ensure your oil is at the right temperature; if it's too cool, the cereal will soak up oil and become greasy.
