Method
In a mixing bowl, combine the boiled sweet corn, chopped capsicum, grated cheese, green chilies, oregano, and chili flakes.
Lightly butter one side of each bread slice.
Spread a generous portion of the corn and cheese mixture over the unbuttered side of the bread slices.
Heat a flat pan or tawa on low-medium flame. Place the bread slices on the pan.
Cover the pan with a lid for 2-3 minutes or until the cheese has completely melted and the bottom of the bread is golden brown and crispy.
Remove from heat, cut into triangles, and serve hot with tomato ketchup.
Notes
Toast only on a low flame to ensure the bottom doesn't burn before the cheese melts.
Use a mix of mozzarella and cheddar for a better cheese pull and flavor.
For a crispier texture, you can lightly toast one side of the bread before adding the toppings on the other side.
