Method
Coat a large non-stick skillet with cooking spray and place it over medium heat.
Add the Canadian bacon slices to the skillet and cook for 1 to 2 minutes per side until they are warmed through and slightly browned at the edges.
Move the bacon to a plate and cover it to keep warm.
In the same skillet, crack the eggs carefully. If you prefer a tidy sandwich, use silicone egg rings to maintain a circular shape. Cook the eggs for 2 to 3 minutes, then flip and cook for another minute until the whites are fully set and the yolk reaches your desired firmness.
While the eggs are finishing, toast the whole-grain bagel thins until they are crisp.
Lay the bottom halves of the toasted bagel thins on a flat surface. Layer each with 2 slices of Canadian bacon, one cooked egg, and one slice of reduced-fat cheddar cheese.
Add a slice of tomato and a few leaves of baby spinach to each sandwich.
Place the top half of the bagel on each sandwich and serve immediately.
Notes
Use egg whites instead of whole eggs to further reduce the fat content for Phase 1.
If you are in Phase 1 of the South Beach Diet, ensure you are using a strictly whole-grain or high-fiber bagel alternative as directed by your plan.
Warm the tomato slices in the skillet for 30 seconds to bring out their sweetness and prevent the sandwich from getting cold.
Wrap these sandwiches in foil if you need a grab-and-go breakfast for a busy morning.
