Method
Place the chicken breast pieces into the bottom of the crock pot.
In a small mixing bowl, whisk together the soy sauce, rice vinegar, honey, minced ginger, and red pepper flakes until well combined.
Pour the sauce mixture over the chicken and stir to ensure every piece is coated.
Cover the slow cooker and cook on low for 3 to 4 hours or on high for 1.5 to 2 hours, until the chicken is cooked through.
About 30 minutes before serving, whisk the cornstarch and water in a small ramekin to create a slurry. Stir the slurry into the crock pot to thicken the sauce.
Stir in the raw cashews just before serving to maintain their crunch.
Garnish with sliced green onions and serve over cauliflower rice or a measured portion of brown rice.
Notes
To keep the cashews from getting mushy, never add them at the beginning of the cooking process.
If you prefer a sweeter sauce without extra points, swap the honey for a sugar-free maple syrup or a monk fruit sweetener.
