Method

  1. Place the chicken breast pieces into the bottom of the crock pot.

  2. In a small mixing bowl, whisk together the soy sauce, rice vinegar, honey, minced ginger, and red pepper flakes until well combined.

  3. Pour the sauce mixture over the chicken and stir to ensure every piece is coated.

  4. Cover the slow cooker and cook on low for 3 to 4 hours or on high for 1.5 to 2 hours, until the chicken is cooked through.

  5. About 30 minutes before serving, whisk the cornstarch and water in a small ramekin to create a slurry. Stir the slurry into the crock pot to thicken the sauce.

  6. Stir in the raw cashews just before serving to maintain their crunch.

  7. Garnish with sliced green onions and serve over cauliflower rice or a measured portion of brown rice.

Notes

To keep the cashews from getting mushy, never add them at the beginning of the cooking process.

If you prefer a sweeter sauce without extra points, swap the honey for a sugar-free maple syrup or a monk fruit sweetener.

Use low-sodium soy sauce to keep the sodium content under control, which is important for heart health and bloating.

For extra volume without extra points, add a bag of frozen stir-fry vegetables during the last 45 minutes of cooking.

Questions

How many Weight Watchers points is this recipe?
Depending on your specific plan, a serving is typically 5-7 points. Using chicken breast (zero points on some plans) helps keep the count low.
Can I use chicken thighs instead of breasts?
Yes, but keep in mind that chicken thighs will increase the fat content and Weight Watchers point value.
Can I make this on the stove instead?
Absolutely. Sauté the chicken in a pan first, then add the sauce and simmer for 10-15 minutes until thickened.
How should I store leftovers?
Store in an airtight container in the fridge for up to 4 days. Note that the cashews will soften when stored in the sauce.
