Method
Place a high-quality non-stick pot over medium-low heat.
Add the sliced onions to the dry pot. Do not add oil or butter. Constantly stir the onions, adding 1-2 tablespoons of beef broth or water every few minutes whenever the onions begin to stick to the bottom. This process replaces the traditional sautéing and helps the onions brown through deglazing.
Continue cooking the onions for 25-30 minutes until they are soft and deep mahogany brown.
Add the minced garlic and dried thyme, stirring for 1 minute until fragrant.
Pour in the remaining beef broth, apple cider vinegar, and the single drop of stevia (this helps mimic the natural sweetness of caramelized onions).
