Method
Core the apple and slice it into thin, uniform wedges.
In a small non-stick skillet over medium-low heat, whisk together the water, cinnamon, nutmeg, and stevia.
Add the apple slices to the skillet and stir to ensure every slice is coated in the cinnamon liquid.
Cover the skillet with a lid and simmer for 5 to 8 minutes, or until the apples are fork-tender.
Remove the lid and stir in the vanilla extract. Continue to simmer uncovered for 1 more minute until the sauce thickens into a glaze.
Transfer the apples and all remaining sauce to a bowl and serve immediately while warm.
Notes
Use Granny Smith apples for a tart flavor that mimics traditional apple pie.
Slice the apples very thinly so they soften quickly and release their natural pectin to thicken the sauce.
If the sauce evaporates too quickly, add one tablespoon of water to prevent scorching.
Sprinkle a tiny pinch of sea salt to enhance the sweetness of the stevia.
