Method
Lightly coat a small non-stick pan with olive oil or cooking spray and set over medium heat.
Add the diced bell pepper, onion, and ham to the pan and cook for about 3 to 4 minutes until the vegetables are softened and the ham is slightly browned.
While the vegetables cook, lightly beat the egg whites with black pepper in a small bowl.
Pour the egg whites into the pan, ensuring they cover the ham and vegetable mixture evenly.
Let the eggs sit for about 2 minutes until the edges begin to set. Lift the edges with a spatula to let the uncooked egg flow underneath.
Once the omelet is mostly set but slightly moist on top, sprinkle the reduced-fat cheddar over one half.
Fold the omelet in half over the cheese and cook for an additional 30 to 60 seconds until the cheese is melted.
Slide onto a plate and serve immediately.
Notes
Use a high-quality non-stick pan to ensure the egg whites slide out easily without needing excess oil.
For the best texture, do not overbeat the egg whites; just mix them until the consistency is uniform.
If you prefer more heat, add a dash of hot sauce after cooking, which is South Beach Diet friendly.
Ensure your ham is labeled 'extra-lean' to keep the saturated fat content within Phase 1 guidelines.
