Method

  1. Preheat your outdoor grill to medium-high heat (approximately 400°F/200°C).

  2. Rub the chicken breasts with lime juice, chili powder, cumin, salt, and pepper until evenly coated.

  3. Place the chicken on the grill grates and cook for 6 to 7 minutes per side, or until the internal temperature reaches 165°F (74°C).

  4. Remove the chicken from the grill and let it rest for 5 minutes before slicing into thin strips or small bite-sized cubes.

  5. Place a flour tortilla flat on the grill for about 30 seconds to soften, then flip it over.

  6. Quickly sprinkle 1/2 cup of cheese, a quarter of the grilled chicken, some cilantro, and jalapeños over one half of the tortilla.

  7. Fold the tortilla in half using a large spatula and press down lightly. Grill for 1-2 minutes per side until the tortilla is crispy with visible grill marks and the cheese is fully melted.

  8. Repeat with the remaining tortillas and filling. Slice into wedges and serve immediately with salsa or sour cream.

Notes

To prevent the tortillas from burning, keep them on the cooler side of the grill if your fire is too hot.

Don't overstuff the quesadillas; a thinner layer of filling ensures the cheese melts evenly before the tortilla burns.

Brush the outside of the tortillas lightly with oil for an extra crispy, golden-brown finish.
