Method
Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
Place each chicken breast between two sheets of plastic wrap and pound to a uniform 1/2-inch thickness using a meat mallet or heavy pan.
Layer one slice of ham and one slice of Swiss cheese onto the center of each flattened chicken breast.
Roll the chicken tightly around the filling and secure the seam with toothpicks to keep the cheese enclosed.
In a shallow dish, whisk together the egg and Dijon mustard. In a separate dish, mix the crushed pork rinds, parmesan cheese, and garlic powder.
Dip each chicken roll into the egg wash, then dredge in the pork rind mixture until fully coated, pressing the crumbs firmly onto the meat.
Place the chicken onto the prepared baking sheet and bake for 25 to 30 minutes, or until the internal temperature reaches 165°F (74°C).
Let the chicken rest for 5 minutes before removing toothpicks and serving.
Notes
To ensure the crispiest coating, use very finely crushed pork rinds that resemble coarse breadcrumbs.
If the cheese starts leaking out, don't worry; it creates delicious crispy cheese bits on the pan.
For a richer flavor, add a pinch of smoked paprika to the pork rind breading mixture.
