Method
Place the chicken breasts in a pot and cover with water. Bring to a boil, then reduce heat and simmer for 12-15 minutes until fully cooked through.
While the chicken is cooking, core and cube the Granny Smith apples into small, bite-sized pieces. Place them in a large mixing bowl.
Drain the chicken and let it cool slightly. Once handled, cut the chicken into cubes similar in size to the apple pieces.
In a small jar or bowl, whisk together the lemon juice, apple cider vinegar, salt, pepper, and optional stevia.
Add the chicken to the bowl with the apples and pour the dressing over the top.
