Method
Use a meat mallet to pound the chicken breasts to an even thickness, roughly 1/2 inch thick.
Season both sides of the chicken with Italian seasoning, salt, and black pepper.
Heat 1 tablespoon of olive oil in a large non-stick skillet over medium-high heat.
Place the chicken in the skillet and cook for 6 to 7 minutes per side, or until the internal temperature reaches 165°F (74°C).
Remove the chicken from the skillet and set aside on a plate, loosely covered with foil to keep warm.
Add the remaining 1 tablespoon of olive oil to the same skillet. Add the sliced peppers and onions.
Sauté the vegetables for 5 to 6 minutes until they are softened and slightly caramelized. Stir in the balsamic vinegar and cook for another minute.
Place the chicken breasts back into the skillet. Top each piece of chicken with a portion of the vegetable mixture.
Place a slice of provolone cheese over each topped chicken breast.
Cover the skillet with a lid for 1 to 2 minutes until the cheese is fully melted and serves hot.
Notes
Pounding the chicken to an even thickness ensures that it cooks uniformly without drying out.
For extra spice, add a pinch of crushed red pepper flakes to the vegetables while sautéing.
Ensure the skillet is hot before adding the chicken to get a nice brown exterior.
If the vegetables are sticking, add a splash of chicken broth or water to help them soften.
