Method
In a small saucepan, combine the tomato paste, apple cider vinegar, and water over medium-low heat.
Whisk the mixture until the tomato paste is fully incorporated and the liquid is smooth.
Add the onion powder, garlic powder, smoked paprika, mustard powder, and liquid smoke, stirring constantly to prevent sticking.
Stir in the stevia or monk fruit sweetener, adjusting the amount based on your preference for sweetness.
Allow the sauce to come to a very gentle simmer and cook for 10-12 minutes until it has thickened to your desired consistency.
Remove from the heat and let the sauce cool completely before using it as a glaze or storing it in an airtight container.
Notes
Ensure your tomato paste contains no added cornstarch or sugar by checking the label carefully.
For a spicier kick that is still HCG-compliant, add a pinch of cayenne pepper or red pepper flakes.
Make this sauce a day in advance; the flavors deepen significantly after 24 hours in the refrigerator.
If the sauce becomes too thick during simmering, add water one tablespoon at a time to thin it back out.
