Red Lobster White Cheddar Mashed Potatoes Recipe

Method
Peel the potatoes and cut them into uniform 1-inch cubes. Place them in a large pot and cover with at least two inches of cold water.
Bring the pot to a boil over high heat, then reduce the heat to medium-low and simmer for 15 to 20 minutes until the potatoes are very tender when pierced with a fork.
While the potatoes are boiling, shred the white cheddar cheese manually if possible for the smoothest melt.
Drain the potatoes thoroughly in a colander and return them to the hot pot for 1 minute to allow any residual steam to escape.
Mash the potatoes using a handheld masher or a potato ricer until no large lumps remain.
Stir in the butter and heavy cream, mixing until the texture is smooth and creamy.
Fold in the shredded white cheddar cheese, garlic powder, salt, and pepper. Continue stirring until the cheese is completely melted and incorporated.
Serve immediately while hot, optionally topped with a little extra melted butter or chopped parsley.
Notes
Always start potatoes in cold water to ensure they cook evenly from the center out.
Warm the heavy cream and butter slightly before adding them to the mash to keep the potatoes from cooling down.
Avoid over-mixing the potatoes after adding the dairy, as this can cause them to become gummy or gluey.
Freshly grated cheese melts much better than pre-shredded bagged cheese, which contains anti-caking agents.
