Method

  1. In a small bowl, combine the brown sugar, smoked paprika, garlic powder, and onion powder to create a dry rub.

  2. Pat the pork shoulder dry with paper towels and apply the spice rub evenly over all sides of the meat.

  3. Place the seasoned pork into the slow cooker basin.

  4. Pour the apple cider vinegar and chicken broth (or apple juice) around the sides of the pork, being careful not to wash off the spice rub.

  5. Cover and cook on Low for 8 to 10 hours, or on High for 5 to 6 hours, until the meat is fork-tender.

  6. Remove the pork from the slow cooker and transfer to a large bowl or cutting board. Discard the excess fat and most of the liquid from the pot, leaving about half a cup of juices.

  7. Using two forks, shred the meat into bite-sized pieces.

  8. Return the shredded meat to the slow cooker and stir in the barbecue sauce. Let it heat through for 10-15 minutes before serving.

Notes

Use pork butt (shoulder) rather than loin; the higher fat content ensures the meat stays moist during the long cook time.

For a crispier texture, spread the shredded pork on a baking sheet and broil for 3-5 minutes before adding the sauce.

Don't open the lid during the cooking process, as this releases heat and can add significantly to the cook time.

If the sauce is too thick, add a splash of the reserved cooking liquid to reach your desired consistency.

Questions

Can I use pork loin instead of pork shoulder?
While you can, pork loin is much leaner and will likely turn out drier. Pork shoulder is highly recommended for the best texture.
Do I need to sear the meat first?
Searing adds flavor, but this recipe is designed for a quick weeknight setup. The spice rub and slow cooking provide plenty of depth without the extra step.
How long does leftover pulled pork last?
Store leftovers in an airtight container in the refrigerator for up to 4 days, or freeze for up to 3 months.
Can I cook this on High to save time?
Yes, you can cook it on High for 5-6 hours, but the Low setting for 8-10 hours typically yields a more tender result.
