Method
Drain the artichoke hearts thoroughly and chop them into bite-sized pieces. Ensure the thawed spinach is squeezed inside a clean kitchen towel to remove as much moisture as possible.
In the basin of your slow cooker, combine the softened cream cheese, sour cream, and mayonnaise. Stir until the mixture is relatively smooth.
Fold in the chopped artichokes, squeezed spinach, mozzarella, parmesan, and garlic powder. Mix until all ingredients are evenly distributed.
Cover and cook on Low for 2 to 3 hours, or on High for 1 hour, until the cheese is completely melted and the dip is bubbling at the edges.
Give the dip a final vigorous stir to incorporate all the melted cheese before serving directly from the slow cooker.
Notes
To prevent a watery dip, squeeze the spinach multiple times until no more green liquid comes out.
For a touch of heat, add a pinch of red pepper flakes or a dash of hot sauce before cooking.
Serve with sturdy dippers like toasted baguette slices, thick pita chips, or celery sticks.
If the dip is too thick after cooking, stir in a tablespoon of milk or heavy cream to reach your desired consistency.
