Method
Preheat your oven to 180°C (350°F) and grease a 7-inch round cake tin with oil or butter.
In a large mixing bowl, whisk together the fresh yogurt and caster sugar until the sugar is completely dissolved.
Add the baking powder and baking soda to the yogurt mixture, stir gently, and let it sit for 5 minutes until bubbles form on the surface.
Pour in the vegetable oil, vanilla extract, and a tiny pinch of turmeric or saffron for that signature golden color. Whisk well to combine.
Sift the all-purpose flour and salt into the wet ingredients. Fold the mixture gently using a spatula until the batter is smooth and no large lumps remain. Do not overmix.
Pour the batter into the prepared cake tin and tap it on the counter a few times to release trapped air bubbles.
Bake in the preheated oven for 30 to 35 minutes, or until a toothpick inserted into the center comes out clean.
Allow the cake to cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.
Notes
Ensure your yogurt is fresh and not overly sour for a balanced flavor profile.
The 5-minute rest for the yogurt and leavening agents is crucial for the cake's lift and airy texture.
A tiny pinch of turmeric provides a beautiful golden color without affecting the taste, but you can use yellow food coloring if preferred.
Measure your flour using the spoon-and-level method to avoid a dense cake.
