Method
Carefully trim all visible fat from the chicken breasts to ensure they are compliant with HCG Phase 2 guidelines.
Place the chicken breasts in the bottom of the crock pot.
In a small mixing bowl, whisk together the chicken broth, lemon juice, minced garlic, oregano, onion powder, salt, and pepper.
Pour the liquid mixture over the chicken breasts, ensuring they are evenly coated.
Cover and cook on the 'Low' setting for 4 hours (or on 'High' for 2 hours) until the chicken reaches an internal temperature of 165°F and is easy to shred.
Remove the chicken from the pot and slice or shred before serving. Drizzle with a spoonful of the remaining cooking juices for extra moisture.
Notes
Use fresh lemon juice rather than bottled for a significantly brighter and more vibrant flavor profile.
To prevent the chicken from drying out, keep the lid closed for the entire cooking duration.
If you prefer a stronger garlic flavor, add one extra clove or use roasted garlic powder.
This recipe is excellent for meal prep; portion the cooked chicken into 100g containers for easy Phase 2 lunches.
