Method
Place the chicken breasts in the bottom of the slow cooker.
Add the onion, garlic, beans, green chiles, cumin, oregano, and cayenne pepper.
Pour the chicken broth over the top and stir gently to combine the spices.
Cover and cook on Low for 7-8 hours or on High for 3-4 hours.
Remove the chicken to a plate and shred it using two forks, then return it to the slow cooker.
Stir in the sour cream and let it sit for 5-10 minutes to thicken before serving.
Notes
For an even thicker chili, mash one cup of the beans before adding them to the pot.
Add a bag of frozen corn during the last 30 minutes for extra sweetness and texture.
If you prefer a smokier flavor, swap the cayenne for a canned chipotle pepper in adobo sauce.
