Method

  1. Preheat your oven to 425°F (220°C) and line a large baking sheet with parchment paper.

  2. Peel the onions and slice them into 1/2-inch thick rounds, then gently separate the slices into individual rings.

  3. Prepare three separate shallow bowls: fill the first with flour mixed with smoked paprika, garlic powder, and salt; the second with the beaten eggs; and the third with panko breadcrumbs.

  4. Take an onion ring and coat it in the flour mixture, shaking off any excess. Dip it into the egg wash, then press it firmly into the panko breadcrumbs until fully coated.

  5. Place the coated rings on the prepared baking sheet in a single layer, ensuring they do not touch or overlap.

  6. Bake for 10 minutes, then carefully flip each ring and bake for another 8 to 10 minutes until they are golden brown and crunchy.

Notes

For the crunchiest results, place a wire cooling rack on top of your baking sheet and arrange the onion rings on the rack to allow heat to circulate underneath.

If the panko isn't sticking well, ensure the onion ring is fully dried before the flour stage.

Use sweet onions like Vidalia or Walla Walla for a milder flavor that caramelizes beautifully in the oven.

Lightly spray the coated rings with a bit of cooking oil spray before baking to help them achieve a deep golden color.

Questions

Can I make these onion rings gluten-free?
Yes, simply substitute the all-purpose flour with a gluten-free blend and use gluten-free panko-style breadcrumbs.
How do I prevent the breading from falling off?
The key is the flour-egg-panko sequence. Ensure you shake off excess flour so the egg has a thin surface to cling to, which in turn holds the breadcrumbs.
What is the best way to reheat leftovers?
Reheat them in a 350°F (175°C) oven or an air fryer for 3-5 minutes. Avoid the microwave as it will make them soggy.
Can I use red onions instead of sweet onions?
You can, but red onions have a stronger, sharper bite. Sweet onions are generally preferred for this appetizer because they soften and sweeten significantly when baked.
