Method
Heat a high-quality non-stick skillet over medium-high heat. Add the lean ground beef and cook until thoroughly browned, using a spatula to break it into small crumbles.
Once the meat is cooked, drain any excess liquid or fat from the pan immediately to ensure it stays within HCG fat guidelines.
Sprinkle the cumin, chili powder, garlic powder, onion powder, and sea salt over the meat. Stir well for 1 minute until the spices become fragrant. If the mixture seems too dry, add 1 tablespoon of water to help the spices coat the beef.
Remove the pan from the heat and set aside.
Lay out the lettuce leaves and divide the beef mixture evenly among them.
Garnish each taco with the diced tomatoes and serve immediately.
Notes
Choose the leanest beef possible, ideally 95% to 97% lean, to meet Phase 2 requirements.
Ensure the lettuce leaves are completely dry before serving to prevent the taco from getting watery.
You can use a mist of liquid aminos for a savory 'umami' boost if your spice mix feels flat.
If using Romaine lettuce, use two leaves per taco for extra structural support.
