Method
Preheat your outdoor grill to medium-high heat (approximately 375°F / 190°C).
Remove the thin white membrane (silverskin) from the back of the ribs by sliding a knife under it and pulling it off with a paper towel for better grip.
In a small bowl, combine the brown sugar, smoked paprika, onion powder, and black pepper. Rub this mixture generously over both sides of the rib racks.
Tear off two large sheets of heavy-duty aluminum foil. Place each rack on a sheet, pour 2 tablespoons of apple cider vinegar over the meat, and fold the foil tightly to create a sealed packet.
Place the foil packets on the grill, close the lid, and cook for 30 minutes. This steams the meat and ensures it stays juicy.
Carefully remove the ribs from the foil packets and place the naked racks directly onto the grill grates.
Generously brush the tops with BBQ sauce. Close the lid and grill for another 10 to 15 minutes, flipping once and basting again, until the sauce is bubbly and slightly charred.
Notes
Always use heavy-duty foil to prevent bone ends from poking holes and losing moisture.
Let the ribs rest for 5-10 minutes after grilling to allow the juices to redistribute.
For a spicier kick, add a half teaspoon of cayenne pepper to the dry rub mixture.
Check for doneness by lifting the rack with tongs; if the meat begins to crack slightly in the center, they are ready.
