Method
In a medium saucepan, combine the chicken broth, minced ginger, soy sauce, and white pepper. Bring the mixture to a gentle simmer over medium-high heat.
Once simmering, reduce the heat to low to maintain a very gentle surface movement.
In a small bowl, lightly beat the eggs until the yolks and whites are just combined.
Use a spoon to stir the broth in a slow, circular motion, creating a gentle whirlpool effect.
Slowly drizzle the beaten eggs into the broth in a very thin, steady stream. Allow the eggs to set for about 30 seconds before gently stirring again to create delicate ribbons.
Remove the pan from the heat immediately to ensure the eggs stay tender.
Stir in the toasted sesame oil and half of the sliced green onions.
Ladle the soup into bowls and garnish with the remaining green onions.
Notes
To get the thinnest egg ribbons, pour the beaten eggs through the tines of a fork held over the pot.
Avoid a rolling boil when adding the eggs, as high heat will make the egg texture rubbery instead of silken.
For a heartier version, you can stir in a handful of fresh baby spinach at the very end until it wilts.
