Method

  1. Preheat your oven to 400°F (200°C) or prepare your grill to medium-high heat. Cut four large sheets of heavy-duty aluminum foil.

  2. In a large mixing bowl, combine the cubed chicken, diced potatoes, barbecue sauce, and smoked paprika. Toss until everything is evenly coated.

  3. Divide the mixture evenly between the four foil sheets, placing it in the center of each. Sprinkle the chopped raw bacon over the top of each mound.

  4. Fold the sides of the foil over the chicken and potatoes, then fold the ends up to create a sealed packet, leaving a little room for steam to circulate.

  5. Place the packets on a baking sheet and bake for 25-30 minutes, or place directly on the grill for 20-25 minutes, until the chicken is cooked through and potatoes are tender.

  6. Carefully open the packets (watch for steam) and sprinkle with the shredded cheddar cheese. Leave the packets open and return to the oven or grill for 2-3 minutes until the cheese is melted.
