Method

  1. Pat the chicken breasts dry with paper towels and rub evenly with 1 tablespoon of olive oil and the Cajun seasoning on both sides.

  2. Preheat your grill or grill pan to medium-high heat. Place the chicken on the grill and cook for 6 to 7 minutes per side, or until the internal temperature reaches 165°F (74°C).

  3. Remove the chicken from the heat and let it rest on a cutting board for 5 minutes before slicing into strips.

  4. In a large bowl, combine the mixed greens, cherry tomatoes, cucumber, and red onion.

  5. Drizzle the remaining olive oil and lemon juice over the vegetables and toss lightly to coat.
