Easy Low Carb Grilled Cajun Chicken Salad

Method
Pat the chicken breasts dry with paper towels and rub evenly with 1 tablespoon of olive oil and the Cajun seasoning on both sides.
Preheat your grill or grill pan to medium-high heat. Place the chicken on the grill and cook for 6 to 7 minutes per side, or until the internal temperature reaches 165°F (74°C).
Remove the chicken from the heat and let it rest on a cutting board for 5 minutes before slicing into strips.
In a large bowl, combine the mixed greens, cherry tomatoes, cucumber, and red onion.
Drizzle the remaining olive oil and lemon juice over the vegetables and toss lightly to coat.
Divide the salad among four plates, top with the sliced Cajun chicken and fresh avocado slices, and serve immediately.
Notes
To ensure the chicken stays juicy, avoid pressing down on it while it is on the grill.
If your Cajun seasoning doesn't contain salt, add a half teaspoon of sea salt to the rub.
For extra heat, add a pinch of cayenne pepper to the chicken rub.
Slice the avocado just before serving to prevent it from browning.
