Easy Vegan French Toast Recipe

This vegan French toast recipe recreates the classic breakfast staple using a clever plant-based custard made from soy milk and cornstarch. It results in a perfectly golden, caramelized exterior and a soft, flavorful center that pairs beautifully with fresh fruit and maple syrup.

Method

  1. In a wide, shallow bowl, whisk together the soy milk, cornstarch, nutritional yeast, cinnamon, vanilla extract, and maple syrup until the mixture is smooth and the cornstarch has fully dissolved.

  2. Place a large non-stick skillet over medium heat and add one tablespoon of the vegan butter, swirling to coat the surface.

  3. Take a slice of bread and dip it into the liquid mixture, soaking for about 10 seconds on each side. Do not over-soak or the bread will become too fragile.

  4. Place the soaked bread slices onto the hot skillet, cooking only 2 or 3 at a time to avoid crowding the pan.

  5. Fry for 3-4 minutes per side until each face is golden brown and a slight crust has formed.

  6. Add the remaining butter as needed for the second batch of bread.

  7. Serve the toast immediately while hot, topped with extra maple syrup, fresh berries, or vegan yogurt.

Notes

Use bread that is at least a day old; fresh bread absorbs too much liquid and can turn mushy.

If your bread is very fresh, lightly toast the slices in a 300°F (150°C) oven for 5 minutes before dipping.

Whisk the batter occasionally between batches as the cornstarch tends to settle at the bottom of the bowl.

For the best browning, use soy milk as it has a higher protein content than almond or coconut milk.

Questions

Can I use any type of plant milk?
Yes, but soy milk is recommended for the best texture and browning. Oat milk is a good second choice, while almond milk results in a slightly lighter toast.
Why is my French toast sticking to the pan?
This usually happens if the pan isn't hot enough or if you aren't using enough vegan butter. Ensure you use a good non-stick skillet.
Is the nutritional yeast necessary?
While optional, it adds a subtle 'eggy' richness and depth of flavor that balances the sweetness of the syrup.
Can I freeze leftovers?
Absolutely. Let the cooked slices cool completely, then freeze them in a single layer. Reheat in a toaster or oven for a quick breakfast.
